Kale is rich in antioxidant, it contains more beta-carotene and leutin, another carotenoid and responsible for kales pigment, than any other vegetables.

It is also believed that it helps regulate oestrogen and helps protect the colon, not only because of its fibre content but also because of the anti-inflammatory factor.
