- ½ brown onion, finely diced
- 4-5 cloves of garlic
- 4 cups broccoli, broken into florets
- ½ cup button mushrooms, roughly chopped
- 750ml hot water
- 3tbsp miso paste
- 2 tsp. cumin, ground
- 2 tsp. coriander, ground
- 1 cup cooked orecchiette pasta (or any leftover pasta)
Mix the miso paste and water together. Sauté the onion and garlic with a of the miso sauce, till translucent.
Add the remaining ingredients, apart from the pasta, simmer for approx. 20mins or till cook.
Blend the soup till soother, mix through the pasta.
Season to taste and serves drizzled with a little olive oil.
