High Protein Banana and Passionfruit Pancakes

Serve: 4-6, Prep-time: 10 minute, Cooking time: 5-6mins.

Ingredients:

  • 100g Isowhey Complete Banana Protein Powder
  • 100g self-raising flour
  • ½ tsp. baking powder
  • ¼ cup honey
  • 2 eggs
  • 250g ripe banana, mashed
  • 11/3 cups buttermilk
  • 40g extra virgin olive oil
  • Olive oil spray
  • 1 banana, thinly sliced diagonally
  • 3 passionfruit, halved

Method:

Sift the flour, Isowhey Complete Banana protein powder and baking powder into a large bowl. Add the eggs, honey, mashed banana, buttermilk and olive oil and whisk until smooth.

Heat a large non-stick frying pan over medium-high heat. Spray pan with oil. Drop three ¼ cupful’s of batter into pan, allowing room for spreading, cook for 2-3 minutes or until bubbles appear on the surface. Turn and cook for 1 minute or until golden.

Serve with sliced banana and passionfruit on top.
