Cumin Chicken Thighs with Spicy Pistachio Freekah Salad

Serves: 3-4


  • Chicken thighs x6
  • 1 tbsp. cumin, ground
  • 2 tsp. chilli powder
  • ½ cup green yoghurt
  • 4 tbsp. chopped fresh coriander
  • Sea salt to taste

Frekah Salad Ingredients:

  • 1 cup cooked quinoa
  • 4 tbsp. pistachio
  • 2 tbsp. pomegranate seed
  • 1 tbsp. currants
  • 3 tbsp. extra virgin olive oil
  • 2 tsp. sea salt


In a large mixing bowl add all of the chicken ingredients and combine till cover, leave to marinate for 15 minutes

In another mixing bowl combine all of the spicy frekah ingredients and leave to marinate.

Heat a large frying or skillet pan to a medium/high heat and cook the chicken thighs for 3-4 minutes each side.

In a large serves platter spoon the spicy frekah and serve with the chicken on top.
