Coconut “Pasta” Salad

Method

Using a mandolin finely shred your zucchinis and carrot. If you have a special tool to shred coconut then use this to create strips otherwise use pre-shredded coconut.

Place the veggies in a bowl then add the remaining ingredients. Toss well and let marinate for about 30 minutes before serving. If you need moisture and/or salt, add the arame liquid.

Ingredients

  • 2 zucchinis
  • 1 carrot
  • 1 fresh young coconut, or 2 cups shredded coconut
  • 1 red and yellow capsicum, cut into this strips
  • 1 tbls arame, soaked in water until soft then drained (keep)
  • 1 tsp cayenne pepper
  • 3 tbls lime juice
  • 1 lime, zested
  • 1 tsp fish sauce (or sea salt if you want it vego’ and vegan)
