Serves: 4, Prep-time: 15-20 mins, Cook time: 20mins
- 4 x 200-250g of lean turkey breast
- 2 spring onion, finely chopped
- 2½ tbsp. of soy sauce
- 2½ tbsp. of honey
- 2 garlic cloves, crushed
- 1 tbsp. of coconut oil
- Banana leaves, trimmed and cut into a rectangle
- 2 cups red cabbage, shredded
- 2 tbsp. yoghurt
- 2 tsp. sesame oil
- ¼ cup chives, chopped
- 1 tsp. ginger, grated
- 1 garlic clove, crushed
- 2 tbsp. olive oil
Pre-heat the BBQ to medium heat.
In a mixing bowl combine all the ingredients and leave to marinate for 30 minutes.
Wrap the individual turkey breasts in banana leaves, lined with baking paper,securing each with a skewer.
Place on the BBQ and cook for 5-10 minutes each side.
For the salad, combine all ingredients in a large mixing bowl, tossing well.
