Banana Breakfast Bars

Method

Pre-heat the oven to 180C. Line a 20x20cm baking tray with baking paper.

In a small saucepan on a low heat melt the honey and add the olive oil once melted.

Remove the pan from the heat, stir in the oats, almond meal, nutmeg, baking powder and banana.  Thoroughly combine and them pour the mixture into the baking tray and spread evenly.

Place in the oven for 20 minutes or till gold brown.

Cut into medium sized portions.

Serve with yoghurt sprinkled with cinnamon.

Ingredients

  • 2 small ripe bananas, mashed
  • 100g almond meal
  • 350g rolled oats
  • 150g olive oil
  • ¼ cup honey
  • 1 tsp. nutmeg
  • 1 tsp. baking powder

To Serve:

yoghurt
cinnamon
