To kick things off, this week I cooked a family favourite, banana bread, but added my own twist by using hazelnut meal and chocolate protein powder in the batter, hope you enjoy!

Banana and Chocolate Chip Hazelnut Meal Bread

Pre-heat oven: 180C
Prep: 10-15 mins
Cooking: 20-25 mins

Ingredients:
2 cups hazelnut meal (any flour is fine)
¼ cup buckwheat flour
2 tbsp. chocolate protein powder
1 tsp. baking soda
3 ripe bananas, mashed
2 eggs, cracked, whisked
1/3 cup chocolate chips
2-3 tbsp. raw honey
2 tbsp. EVOO (extra virgin olive oil) (or butter, virgin coconut oil)
1 banana, for the topping

Method:

  1. Place dry ingredients into bowl, gently combine
  2. In another bowl, mix wet ingredients, including chocolate chips
  3. Pour wet ingredients into dry ingredients, gently combine
  4. Pour into lined medium sized cake or loaf tin
  5. Place in the preheated oven for 20-25mins
  6. Once cooked, cool, place sliced banana on top and serve
