Serves: 4, prep-time: 10 minutes, cooking time: 45-60 minutes
- 450g cottage cheese
- 1 large ripe banana, mashed
- 1 tsp. sea salt
- 1 tbsp. almond meal
- 1/2 cup honey
- 3 egg yolks
- 1 cup milk
- 3 egg whites
- Nutmeg and allspice
Preheat the oven to 180C. In a large mixing bowl mix together cottage cheese, banana, salt, almond meal and honey.
In a separate bowl, beat egg yolks, add the milk and mix well then beat into cheese mixture.
Beat egg whites until stiff and then fold into cheese mixture.
Place mixture into a baking dish and sprinkle with nutmeg and allspice.
Place dish in pan of water and bake in the oven for 45 minutes.
